Stays: Inness, Upstate New York.

Our driver navigated us around the hills of the Hudson Valley, through buzzing little towns and past remote farmhouses. We’d left New York City a few hours earlier and it was my first time in America. Like a child full of wonder, I as good as pressed my nose up against the window and drank in our journey. I was excited about Inness - as part of a commission with ROADBOOK and Hotels.com I was documenting hotel rooms for their Room Report editorial series and as much I enjoyed the city hotels, I’m a sucker for a cabin.

Pulling up to Inness it felt really special. Entering the shop and reception we were greeted by an enthusiastic team member who quickly got us packed into a landcover and taken down to the farmhouse where we’d be staying for the next few days. The farmhouse is intended as a relaxing but social space, where those that are staying at Inness can congregate, co-work and generally hang out - on the veranda, in the kitchen or in the cosy farmhouse rooms complete with pool tables.

I was excited to get into the cabins the next day but I was kept in wild wonder with dinner in the restaurant sitting at the top of the 220 acres that makes up Inness. With floor to ceiling windows that provides epic views over the Catskills Mountains, it was hard to put my camera down. The food was inspiring and delicious and so very up my street - think sesame carrots and labne with za’atar - so I almost skipped up to breakfast the next morning.
